OOO LALA..Chocolate Coconut bar (taste like Girls Scout Samoas)


My favorite time of year besides the holidays is…..Girls scout cookie selling time !! I love the shortbread and my all time favorite is the Samoas !! They are chocolatey, coconuty and caramelly !! I love all those things. I found a recipe on Martha Stewart and they are so close to tasting like Samoas that I had to share. I usually  try to find a recipe that has vegan options but this one is not one of those. If I can make it using vegan supplies I will update you !! To make this special treat you’ll need:

  • 3 cups finely ground cookies (like graham crackers, shortbread, chocolate wafers, vanilla wafers)
  • 1/4 cup sugar
  • 3/4 cup unsalted butter, melted
  • 1 cup pecan pieces
  • 1 cup semisweet condensed milk
  • 1 1/2 cups sweetened shredded coconut

Preheat oven to 375. Lightly splash a 15x 10 inch rimmed baking sheet evenly with water, then line with parchment paper

In a large bowl, stir together cookie crumbs, sugar and butter until combined. Evenly press onto bottom and up sides of prepared baking sheets. Bake rotating halfway through, until firm, about 10 minutes. Transfer to a wire rack, cool about 20 minutes

Sprinkle cooled crust evenly with pecans and chocolate. Pour condensed milk over the top, spreading to cover completely (do not let it drip over the edges) Sprinkle with coconut

Bake until coconut is toasted, 10 to 15 minutes. Transfer to rack , cool completely. Trim edges, if desired and cut unto equal sized bars.
